Pour the remaining oil out of the wok but don’t wash it. Add the fried soft shell crabs to the wok and cook over a medium-high flame, stirring frequently, until the crabs are hot.
Although soft-shell crabs are often served fried, grilling soft-shell crabs is far less labor-intensive than frying. No need to dredge each crab in flour or deal with the mess of a deep fryer.
