2010年8月8日 · Ive never used midnight wheat, but based on briess' fact sheet, where they suggest it as a sub for debittered black malt, it seems the two are more or less interchangeable. I feel like FW wouldn't use both in their recipe unless they felt each contributed unique qualities to the finished beer.

2012年2月9日 · I disagree that flaked wheat is a direct substitute for malted wheat in any recipe, regardless of the diastatic power available in the mash. Malted wheat provides a different flavor and body profile than flaked wheat. To the OP - use any malted wheat as a substitute. If you can find one called "Belgian wheat," it is likely malted white wheat.

2018年8月20日 · Spelt is definitely not a gluten free grain. Barley, wheat, rye, triticale and spelt all contain gluten on some level. OP, oats and rye are very versatile grains, but I can’t imagine replicating a wheat-based beer with them. You could try your hand at a German Roggenbier, which is basically a Dunkelweizen with rye instead of wheat.

2010年1月4日 · The wheat is steeped with crystal grains at 155F. The recipe calls for unmalted wheat, it'll only contribute starch and proteins because there are no enzymes in those grains. If you use malted wheat, the starch will convert into sugar. So I'd go with flaked wheat in this case.
