Add back calcium/sulfate/cholride to desired levels depending on style - malty or bitter. That said - I like Lil' Sparky's idea about adjusting pH with acid and using some 5.2 buffer.

2007年12月18日 · I've been messing around with pickling lime (CaO) to reduce my bicarbonates. It reacts with the bicarbonates to give H2O plus insoluble Calcium Carbonate. Also, just "aging" the water will bring it into equilibrium with the CO2 in the air, resulting in the loss of bicarbonate - I don't have a good feel for just how slow this is, other than slow.

AJ: All I know is that I can brew with 100% filtered tap water (138pp bicarb) and get my mash pH correct (by using CaCl, CaSO4 and also lactic acid if necessary) for a pale beer and end of with a harsh, unsmooth, tangy finish in the beer.
