Everything here is Pinche. Kids love the parm and breadcrumb breaded chicken breasts from the market but I only feel worthy when I make things from scratch. That was sarcasm. Sort of. One of my most popular recipes EVER finally gets a reel. Albóndigas and red sauce with a MIREPOIX BASE. The goal is to get as much of a variety of veg into the kids diet and both sauces and meatballs are a great way to do that, while keeping them hidden. MIREPOIX is simply a mix of 50% onion, 25% celery and 25% carrot. A great base for any sauce, soup or mixture. YOU simply sauté it (1 cup onion, 1/2 cup celery, 1/2 cup carrots-all chopped).
