Makmoor Batenjan مكمور الباذنجان Makmoor is a delicious vegetarian dish from Aleppo, Syria that only uses 3 main ingredients: eggplant, tomato, and onion. This was one of my Nana’s specialities, Allah yerhama. It’s one of those dishes that I feel is the embodiment of Syrian cooking, very simple ingredients that make mouthwatering food.
